Watermelon radishes are gorgeous, and are a colorful way to welcome spring to your doorstep! This recipe is simple and lovely, and would make a great side dish, or they would add elements of not only flavor, but color and texture to a salad. Ingredients
1 pound fresh Watermelon Radishes
2 Tbsp Olivna olive oil, plus 1 additional Tbsp for drizzling
1 tsp Pacific Flake sea salt
Instructions
Wash radishes, pat dry and cut into wedges of similar size. Toss with the 2 Tbsp of oil and place in a baking dish about two quarts in size. Roast for about an hour, or until wedges are easily pierced with a fork. Drizzle with remaining Tbsp oil and serve. Alternatively, you can skip the other Tbsp of oil if you are using them in a salad. Feel free to add chopped fresh herbs if you like!
